Green curry is the benchmark Thai curry — green chilli paste loosened in coconut milk, seasoned with fish sauce and palm sugar, and finished with Thai basil. Order it with your choice of protein and steamed rice at our Winnipeg restaurant.
Gaeng keow wan gets its colour and heat from fresh green chillies pounded with lemongrass, galangal, coriander root and kaffir lime. That paste is fried in coconut milk until it smells sweet and toasted, which is the step that gives a green curry its depth.
From there the curry is simmered with vegetables and your choice of protein, seasoned with fish sauce and a little palm sugar, and finished with Thai basil off the heat. It arrives fragrant rather than heavy, and it is best eaten with plenty of steamed rice.
Frying the paste first is non-negotiable in our kitchen — it is the difference between a curry that tastes rounded and one that tastes raw. Each order is finished in its own pan, so we can cook it mild for one table and hot for the next.
Traditionally yes — green curry paste is made with fresh green chillies and is usually the hotter of the two. We cook each order to the spice level you ask for, so mild is always an option.
Green curry is served with your choice from our menu, and tofu is available if you would prefer a meat-free bowl. Ask our team when you order.
The sauce is built on coconut milk rather than dairy. Ingredients vary by dish, so please tell us about any allergy or dietary requirement and our team will confirm what is suitable.
