Pad Thai is the dish our guests name most often, and the one Winnipeg keeps coming back for. Rice noodles are tossed in a hot wok with sweet soy, egg, bean sprouts and green onion, then finished with crushed peanuts and a wedge of lime.
Pad Thai lives or dies on its sauce. Ours is built on sweet soy, which is what gives the noodles their savoury-sweet finish instead of the flat, ketchup-heavy version served elsewhere.
The noodles are soaked rather than boiled so they keep their chew, then tossed quickly over high heat with egg, bean sprouts and your choice of protein. Crushed peanuts and lime go on last, at the table or in the container, so the texture is still there when the box is opened at home in Fort Rouge, River Heights or Crescentwood.
Each order is cooked as its own portion in a screaming-hot wok, never in a big batch. That is what keeps the noodles separate and slightly smoky rather than sticky. Tell us how hot you like it and we will adjust the chilli when we season the wok.
We build the sauce on sweet soy rather than tomato, soak the rice noodles instead of boiling them, and cook every order in its own wok so the noodles stay separate and lightly smoky.
