Satay is Thai street food at its best: strips of marinated meat threaded onto skewers, fried until golden, and served with peanut sauce for dipping. It is one of the most ordered starters at our family owned Winnipeg restaurant.
Good satay starts long before the fryer. The meat is marinated in a turmeric and coconut milk mixture with warm spices, which colours it a deep gold and keeps it tender. Only then does it go onto skewers and into the fryer, cooked until the outside is golden and the inside is still juicy.
The peanut sauce served alongside is the other half of the dish — rich, mildly sweet and made to be spooned over every bite. Satay is the natural partner to spring rolls at the start of a meal, and it is just as good picked up on the way home to Fort Rouge or River Heights.
Skewers are fried to order rather than held warm, so the outside stays crisp instead of drying out. They are plated straight off the heat with peanut sauce on the side, and packed the same way for takeout so nothing steams in the container.
